“The local products we use at Mani really compliment the different elements of our modern Irish menu, which caters for everyone. We get our vegetables from Tom Shanahan (Mitchelstown), some of our meat from Brendan Healy Artisan Butcher (Cahir), and cheeses from Cashel Blue Cheese and Cooleeney Farmhouse (Thurles). I am enjoying utilizing my experience and cooking my style of food at Mani Restaurant. The feedback has been very good and people are really enjoying it,” Declan smiles.
