With over 24 years experience in the industry, Mani new head chef Declan Hayes brings a wealth of knowledge to the restaurant. He has worked for award-winning restaurants in the United States, Limerick and across Tipperary, developing and continuously adding new recipes to his menu. His innovative, healthy approach to dining combined with 100% Irish meat and seasonal, organic ingredients from local producers are igniting taste buds and receiving rave reviews.

“The local products we use at Mani really compliment the different elements of our modern Irish menu, which caters for everyone. We get our vegetables from Tom Shanahan (Mitchelstown), some of our meat from Brendan Healy Artisan Butcher (Cahir), and cheeses from Cashel Blue Cheese and Cooleeney Farmhouse (Thurles). I am enjoying utilizing my experience and cooking my style of food at Mani Restaurant. The feedback has been very good and people are really enjoying it,” Declan smiles.

Declan says Mani Restaurant offers diners “something different” in Clonmel. “We are aiming to be the best restaurant in Clonmel quality wise. We want to give locals what they want and show them that they don’t have to go out of town to enjoy great food,” Declan adds.
