Independent butchers from all over Ireland recently demonstrated their creativity and butchery skills in the Easter Lamb Display Challenge, hosted by the Irish Butchers’ Guild. The event featured a diverse range of traditional lamb cuts, presented with a unique twist, as well as innovative products that caught the judges' attention.
The displays included Guards of Honour, Crowns of Lamb, Herb-Crusted Rump of Lamb, Lamb Noisettes, Lamb Cushions, as well as more recognisable stuffed Legs of Lamb and Carvery Roast Lamb. There were also many innovative products on display, such as Merguez Lamb Sausages, Lamb Truffles, Lamb Koftas, and Lamb Pinwheels, among others. Each entry was evaluated based on a set of criteria, including the visual appeal and attractiveness of the presentation, the range and quality of products, creativity and innovation, as well as the butcher's skill.
Local butchers, O’Dwyers Butchers in Cashel and The Gourmet Butchers in Clonmel were each awarded a 4-Star Award for their impressive lamb display. The judges were impressed with the excellent presentation, top-quality meat, and innovative approach. The overall Champion award went to Murphy’s Butchers from Tullow, Co. Carlow, who stood out with their exceptional display, creativity, and skilful presentation, narrowly beating other talented entrants. Members of the Irish Butchers’ Guild share a deep commitment to upholding their craft, to the quality and provenance of their products and to the pursuit of excellence in their businesses.
