Newly founded Tipperary Boutique Distillery celebrated the launch of their first expression - a fine single malt Irish whiskey called ‘The Rising’- at a special event which was held in the Galtee Inn, Cahir, on Friday last. The event was attended by members of the local business community, family, friends and well-wishers including the Minister for Agriculture Simon Coveney TD, who were all treated to an expert whiskey tasting master-class featuring ‘The Rising’. The Tipperary Boutique Distillery is the collective realisation of local farmer Liam Ahearn, his fiancée Jennifer Nickerson and Jennifer’s father Stuart Nickerson who is a renowned Whiskey Expert based in Scotland. With planning permission granted, Liam Ahearn formally announced that the Distillery is likely to be based on the grounds of the Ahearn Family farm, which has been in the Ahearn family for five generations at Ballindoney, Grange, Clonmel, and will utilise the barley grown on the farm in distilling its own whiskies in the near future. It is anticipated that the Distillery will employ up to 12 people and it is hoped that these roles will be fulfilled locally. Speaking at the event, Minister Simon Coveney said “This launch shows Tipperary marking out a place in the premium Irish Whiskey sector, which recorded 10% export growth in 2015 to reach a value of €410m”. A limited supply of just 1,916 bottles of the Rising has been produced and will be available from local retailers and online from Cooper’s Off Licence and the Celtic Whiskey Shop, at €75 per bottle.
