"In fact, I think I've gone through the last six months in absolute shock and it's now that it's only landing with me and I just can't get him out of my head."
Waterford native and owner of acclaimed restaurant in Dungarvan And Chips, Eunice, described her son as "wild, adventurous, and absolutely hilarious", and that his death "completely took me by surprise".
The TV cook also said that her and husband Edmund recently divorced after "growing apart" but that they are "parents number one".

Eunice, who is also mum to Michael and Kieran, say her sons miss their brother deeply and are "just trying to work with the new norm.
"It's indescribable and you don't know," she continued, "I mean I think it'll probably take years for this to kind of pan out for us. But we only have this one life, this is all we have and it's so easily whipped away from you.
