Part of popular Tipperary food store forced to shut amid 'grease and dirt' in food prep area

Part of a popular food store in Tipperary was forced to close in December after health inspectors found the premises to be "inadequately cleaned" which risked "immediate contamination".

The closure order was served on the person in charge and Stevenage Management Limited, owners of Centra located on Main Street in Killenaule, county Tipperary.

The deli area of the popular shop was subject to the closure order.

According to the inspector's report, the deli area of the shop was forced to close as breaches of food safety legislation was found.

As per legislation, food premises are to be kept cleaned and maintained in good repair and condition. During the inspection, the inspector noted "visible long-standing dirt, indicating failure of effective cleaning, along with extensive accumulations of old food debris, grease and dirt on the floor behind equipment."

It was also noted that food equipment was positioned in such a way that effective cleaning couldn't be upheld leading to food debris within the area.

The cooked meat slicer also contained old food debris and old residues of food on contact surfaces which posed an "immediate contamination risk".

Chicken pieces in the deli area were found to be at a core temperature of "45 degrees in hot holding" which had not been recorded by the businesses oven temperature monitoring procedures and no corrective action had been taken prior to the inspection.

Curry sauce was also not being prepared in accordance with the manufacturers instructions and the businesses HACCP based procedures but was being placed in hot holder without being cooked first.

The closure order was served on December 5, 2025, and was lifted on December 8, 2025.
