An inspiring story for those looking to make a lifestyle change in the New Year comes from local Kilbarron woman Emma Dennison.
Emma recently spoke to the Tipperary Star about her dramatic weight loss and how she achieved such a phenomenal feat.
At 41-years-old, Emma’s life is a testament to perseverance, transformation, and the power of finding the right support.
Having lost an incredible eight stone with the 1:1 Diet by Cambridge weight plan, Emma is nearing the end of her remarkable weight loss journey - a journey that has not only transformed her physically but has reignited her confidence and zest for life.
The Cambridge diet is a calorie-controlled diet aimed at rapid weight loss. There is a strict regime to follow, starting as a 12-week, very low-calorie diet consisting of meal replacements in the form of shakes, soups and bars.
Emma’s relationship with her weight has been a lifelong challenge. From struggling as a young girl to becoming a self-proclaimed “serial yo-yo dieter,” her battle with weight came to a head in 2006 when she suffered a serious knee injury.
“Before my knee injury, I was fairly active,” Emma recalls. “But after the surgery, I was in a full cast for months. Slowly, silently, the weight crept on. It felt like, in the blink of an eye, I was many stones overweight.
“I used my knee as an excuse for everything: I can’t walk because of my knee; I can’t swim because of my knee. Over time, that excuse became the barrier stopping me from living the life I deserved.”
Despite the challenges, Emma found joy in her life. She married her husband, whom she met before her knee injury, and they built a beautiful family together. But even as her family grew, her weight continued to take a toll on her mind and body. The birth of her two sons, one of whom has autism and unique food needs, added layers of complexity to her lifestyle.
“I’d end up cooking multiple meals at night, and in the chaos, I’d grab quick, calorie-packed foods for myself. The weight kept creeping up,” Emma says. “By the time we tried for a third baby, I realised my weight was affecting my fertility.”
After struggling to conceive, Emma and her husband decided to move forward as a family of four. It was then that she had a revelation: it was time to take control of her health for her children, her husband, and herself.
“I wanted to be the best mammy I could be for my boys,” Emma says. “I’d heard of the 1:1 Diet while living in England, and I decided to give it a go. Finding the right step that fit into my life made all the difference. It silenced the ‘food noise’ in my head and gave me the tools to finally take control.”

It’s designed to address not only what you eat but how you feel and think about food, which is what makes it so effective long-term.” Emma lost five stone during the first phase of her journey, and as if by magic - or divine intervention - she discovered she was pregnant with her longed-for third child. “Losing the weight restored my fertility. I didn’t even realize I was nearly halfway through my pregnancy until I took a test,” Emma shares.
“That pregnancy was so much easier compared to my previous two. I felt healthier, lighter, and full of energy. It was such a blessing.”
After welcoming baby Alistair, Emma allowed herself the time to focus on her new bundle of joy, breastfeeding him for six months before returning to the plan. Picking up where she left off, she lost additional weight and reached a total loss of eight stone. But the number on the scale is only part of the story.
Life at home on the farm looks completely different for Emma today. She’s not just lighter - she’s stronger, more confident, and truly happy in her own skin. “If you’d told me a few years ago that I’d become a runner, I would have laughed. Now, I run two to three times a week, often 5 to 7 km, and I’ve even completed several 10km runs. Running is something I never imagined I could do.”
Becoming a healthier version of herself also led Emma to a new career. She’s now a certified 1:1 Diet Consultant, helping others on their weight loss journeys.
“Being a consultant is so rewarding,” Emma says. “I love seeing people transform—not just in their weight but in their confidence. It’s such a privilege to be part of their story.” Emma’s story is proof that change is possible, no matter how daunting it may seem. She’s built a healthier, happier future for herself and her family, and she’s passionate about helping others do the same.
“Weight loss isn’t just about looking good - it’s about reclaiming your life,” Emma reflects. “I’m happier and healthier now than I ever was in my twenties.
